Almond Paste for Semla (Fat Tuesday Bun)

Grind the dried blanched almonds in an almond grinder or blender.

Mix the ground almonds with the sugar in a bowl.

Add the liquid until the paste has the desired feel/consistency. The amount of liquid required varies depending on how oily/dry the almonds are.

Keep it cold in the fridge.

The almond paste tastes a lot better after a few days in the fridge!

 

1 pound blanched almonds
1 cup powdered sugar
1 cup sugar
2-3 teaspoons water or milk/cream
