Janson's Temptation (Jansons frestelse)

 

6 potatoes (medium size)
2 onions, sliced thinly
10 anchovy fillets
5-6 tbsp butter
3/4 c heavy cream

Preheat oven to 375 F.

Peel potatoes and cut into matchsticks and rince in cold water. Place the potatoes between paper towels to dry.

Melt 2 tbsp butter in a skillet over medium heat. Add onions and saute until golden brown.

Spray a baking dish with nonstick spray.

Place a layer of potato, followed by a layer of anchovy then a layer of onion untill the dish is almost full. End with a layer of potato.

Pour 1/2 c (119 ml) cream over the potatoes and dot with 4-5 tbsp butter.

Bake at 375 F for about 45 minutes.

Half way through the baking time the rest of the cream over the top.

 

Serve as a late night party snack or as a dish at the swedish smorgasbord.
