1 cup butter, softened
1/2 cup sugar
1 egg
1 tsp. almond extract
1/4 tsp salt
3 cups white all-purpose flour
Coating:
2 egg, beaten
1/3 cup sugar
1 cup finely chopped almonds

Preheat oven to 350 F (175°C).
Lightly grease a cookie sheet.
In a bowl, cream the butter and sugar together until smooth.
Add the egg, almond extract. Combine the salt and the flour and stir flour into the mixture.
Work the dough with your hands to form a smooth dough.
Shape the dough into log shaped pieces about 1/2 inch thick and 2-3 inches long. Cut into 2 1/2 inch lengths and roll first in the beaten egg, then in the sugar, then in the almonds.
Place on a lightly greased cookie sheet about 1 inch apart.
Bake at 350° for 8-10 minutes in preheated oven, or until just barely golden.
Allow cookies to cool on baking sheet for a few minutes before removing to a wire rack to cool completely. |
