Swedish Oven Pancake (Ugnspannkaka)
Swedish oven pancake is traditionally served as a dinner but is also great for breakfast or brunch. Serve this dish with lingonberry preserves or raspberry jam.
It's a very easy dish to prepare and it should bake in the oven for about 35 - 45 minutes.
Recipe for swedish oven pancakes:

1 Packet of Bacon,
(finely chopped)
1 leek (small)
3 egg
3 cups of milk
1 tsp salt
2 cups white flour
lingonberry preserves

Preheat oven to 425 F.
Spread the pieces of bacon in 9x13 pan and bake in the oven until bacon is slightly crispy (absolutely not dried out).
Rinse and cut the leek into thin slices and spread evenly in the pan.
Mix the eggs, milk, salt and gradually add flour. Make sure it is well blended.
Pour the batter into the pan over the bacon and leek.
Bake the Swedish oven pancake in the middle of the oven at 425 F for about 30 - 40 minutes.
Serve Swedish oven pancake with lingonberry preserve, raspberry jam or maple syrup.
